I tried brewing the 1st series of Izumi tea multiple times.
By brewing multiple times, you can enjoy the flavors created in each tea-making process as if time were being rewound.

Our Izumi tea is a hybrid production method combining Chinese black tea and Southern black tea.

To preserve the potential of the tea leaves, we make it without cutting the leaves, layering hot water and time, returning to the teaware, and as the buds bloom, the flavors that were tightly closed spread out. Please enjoy the different flavors compared to the first brew.

This time, I used a small 80cc teapot.
The amount of tea leaves is 4g each.

①The brewing time for 【1st Premium EX】 and
【1st Premium 2020】 is especially quick because it is black tea from soft buds, where the hot water is easily transmitted.
Let's be conscious of a quicker extraction.

1st brew - brew immediately
2nd brew - 10 seconds
3rd brew - 20 seconds
4th brew - 30 seconds
5th brew - 45 seconds
6th brew - 1 minute
7th brew - 1 minute and a half
8th brew - 2 minutes
9th brew - 2 minutes and a half
10th brew - 3 minutes

The flavor characteristics are broadly divided into four types.
①1st to 3rd brews - gentle flavors and sweetness like white tea. Refreshing like a pear.
②4th to 6th brews - enjoy the balance of umami and sweet fragrance. Citrus scent.
③7th to 8th brews - enjoy the balanced sweet aroma and crisp astringency reminiscent of 1st Darjeeling.
④9th to 10th brews - a pleasant astringency goes well with sweets.

This time, I poured the next brew's water before the teapot cooled, so if you're enjoying it slowly, it might be good to steep a bit longer (10 to 20 seconds).
I think it's interesting to predict the time for the next brew each time you brew.

I hope you can also enjoy the change in flavors after it cools.
Regarding the premium, you can enjoy the differences in flavor between (young leaves - refreshing taste) and (mature garden - deep flavor).

Here, the tea leaves have some thickness, so overall extraction time was kept slightly longer.
